Baked Oatmeal Maple Pecan

I love oatmeal and not the kind that comes in those little packages. I've been known to cook a pot of oatmeal and then splash my favorite coffee creamer in the bowl when serving. Baked oatmeal has an extra crunch and special flavor. Serve with nuts and fruit or serve with spiced brown sugar milk. This recipe is Joanna Gaines found here.

  • 1½ cups milk 
  • 2 large eggs 
  • ¾ cup maple syrup 
  • ¼ cup unsalted butter, melted 
  • 1½ teaspoon baking powder 
  • 1½ teaspoon vanilla extract 
  • 1 teaspoon cinnamon 
  • ¼ teaspoon salt 
  • 3 cups rolled oats 
  • ½ cup chopped pecans

1. Preheat the oven to 350°F and butter an 8 x 8-inch baking dish, set aside. 

2. In a large mixing bowl whisk together milk, eggs, maple syrup, butter, baking powder, vanilla extract, cinnamon, and salt. Add the oats and pecans and stir to combine. 

3. Spread oat mixture into prepared baking dish and bake in the preheated oven for 30 to 35 minutes. 

4. Let cool for 10 minutes then cut into 3 x 3-inch squares. 

5. While oatmeal is cooling, add the milk and spiced brown sugar syrup to a small saucepot. Warm over medium heat for about 2 minutes, whisking occasionally until the milk comes to a simmer. 

6. To serve, pour about ¼ cup of warm spiced milk over the square of warm baked oatmeal.

spiced brown sugar syrup

  • ⅓ cup water 
  • ⅓ cup packed light brown sugar
  • ¼ teaspoon vanilla bean paste 
  • ⅛ teaspoon ground cinnamon

1. In a small saucepan, combine the brown sugar, ⅓ cup of water, the vanilla bean paste, and cinnamon over medium heat. Bring the mixture to a boil, then continue boiling for about 3 minutes. Remove from the heat and let cool for 20 minutes.
